Fast-casual restaurant chain specializing in empanadas opens first Lehigh Valley location

Empanadas Monumental, offering a wide array of empanadas and other Latin American specialties, opened Sept. 24 at 702 Hanover Ave. on Allentown’s East Side. The fast-casual restaurant is the first Lehigh Valley location of a national chain.
